Guineitos en Escabeche de Bacalao

Green bananas with salted pollock/cod fish. Learn how to make this simple yet delicious Puerto Rican dish.

Equipment

  • 6 qt or larger multi pot
  • sauce pan

Ingredients
  

  • 10 whole green bananas these are usually found in the fridge section of food markets
  • 16 oz boned salted pollock see notes for suggestions
  • 1 tbsp salt
  • 2 small yellow onions
  • 1/2 cup green olives
  • 2 dry bay leaves
  • 1 lime
  • 1/2 cup canola oil

Instructions
 

  • cut the ends of the banana and make two slits on each side of the banana
  • on a large multi pot, add about 8 cups of water, or enough to cover the bananas
  • add the bananas and salt to the multi pot
  • cover and let it boil on high heat for about 20-25 minutes or until you can easily peel the bananas with a fork
  • on a sauce pan, add the pollock and enough water to cover it
  • cover sauce pan and let pollock boil on high heat for about 5 minutes. Keep checking to avoid sauce pan from overflowing with foaming water.
  • slice the onions and green olives and place in a medium bowl
  • add the bay leaves, lime, and oil to bowl
  • mix, mix, and mix! Let it marinade.
  • Once the pollock begins to boil, take away from heat. Drain water and add new fresh, cold water to the sauce pan. This is very important because it will help remove the salt of the pollock.
  • Flake the pollock and add to the bowl with the onions, green olives, lime, and oil.
  • Peel the bananas with a fork and remove from heat. Drain the water.
  • cut the bananas in small slices
  • in a large bowl or pot, add the sliced bananas and the pollock mix
  • mix and add more oil if needed.

Notes

Tips:
  • You can buy the boned salted pollock/codfish at your local hispanic store. I have seen it a some Walmarts as well. 
  • If the pollock is too salty, even after placing it in cold water, drain the water again and add more cold water to wash the salt away. 
  • Do not buy green bananas unless they are in a fridge, otherwise, they might turn out sweet. This is NOT a sweet dish.
  • Remove the Bay leaves before adding to the cooked green bananas, as they can add a very strong flavor.
  • Store in the fridge and serve cold or warm (in the stove or microwave) the next day.
