cut the ends of the banana and make two slits on each side of the banana
on a large multi pot, add about 8 cups of water, or enough to cover the bananas
add the bananas and salt to the multi pot
cover and let it boil on high heat for about 20-25 minutes or until you can easily peel the bananas with a fork
on a sauce pan, add the pollock and enough water to cover it
cover sauce pan and let pollock boil on high heat for about 5 minutes. Keep checking to avoid sauce pan from overflowing with foaming water.
slice the onions and green olives and place in a medium bowl
add the bay leaves, lime, and oil to bowl
mix, mix, and mix! Let it marinade.
Once the pollock begins to boil, take away from heat. Drain water and add new fresh, cold water to the sauce pan. This is very important because it will help remove the salt of the pollock.
Flake the pollock and add to the bowl with the onions, green olives, lime, and oil.
Peel the bananas with a fork and remove from heat. Drain the water.

in a large bowl or pot, add the sliced bananas and the pollock mix
mix and add more oil if needed.
